Roasted Loin of Pork

½ Cup Cuisine Perel Sweet Raisin Balsamic Vinegar
4 T. Olive Oil
1 4 pound center-cut pork loin
1 1/4 cups canned low-salt chicken broth

  • Combine vinegar and 2 T. oil and add pork
  • Allow to marinade 2 hours to overnight
  • Preheat oven to 375°F.
  • Remove pork from marinade, reserving marinade
  • Sprinkle pork with salt and pepper.
  • Heat remaining oil in large wide oven-proof pot over medium-high heat

  • Add pork and cook until brown on all sides, about 8 minutes.
  • Add reserved marinade back to pan
  • Transfer to oven and roast until thermometer inserted into center of pork registers 150°F, about 35 minutes.
  • Transfer pork to platter and serve
