Truffled Mashed Potatoes
1 lb potatoes, peeled and quartered
3 Tbsp. Butter
1 cup milk or cream
Salt and pepper to taste
5-6 Tbsp. Cuisine Perel Truffle Oil
Boil potatoes in seasoned water until tender
Drain and turn out onto sheet pan to allow water to evaporate
While still warm, press through ricer or food mill or mash by hand to desired consistency
Mix in butter and milk and blend well
Season with salt and pepper to taste
Directly before serving, blend in truffle oil
Serves 4
