Truffled Mashed Potatoes

1 lb potatoes, peeled and quartered
3 Tbsp. Butter
1 cup milk or cream
Salt and pepper to taste
5-6 Tbsp. Cuisine Perel Truffle Oil
  • Boil potatoes in seasoned water until tender
  • Drain and turn out onto sheet pan to allow water to evaporate
  • While still warm, press through ricer or food mill or mash by hand to desired consistency
  • Mix in butter and milk and blend well
  • Season with salt and pepper to taste
  • Directly before serving, blend in truffle oil
