½ Cup Cuisine Perel Sweet Raisin Balsamic Vinegar
4 T. Olive Oil
1 4 pound center-cut pork loin
1 1/4 cups canned low-salt chicken broth
Combine vinegar and 2 T. oil and add pork
Allow to marinade 2 hours to overnight
Preheat oven to 375°F.
Remove pork from marinade, reserving marinade
Sprinkle pork with salt and pepper.
Heat remaining oil in large wide oven-proof pot over medium-high heat
Add pork and cook until brown on all sides, about 8 minutes.
Add reserved marinade back to pan
Transfer to oven and roast until thermometer inserted into center of pork registers 150°F, about 35 minutes. Transfer pork to platter and serve
